Adolfo Henrique had funnelled every spare real into Fazenda Passeio’s processing infrastructure: fermenting rooms, precision milling, 4,000 square metres of concrete drying terraces, temperature-controlled rotary dryers. The Story
Fazenda Passeio’s equipment tells you something about Adolfo’s priorities. The clarity and precision in the cup — crisp apple, grape, an unusual hickory depth — are a direct product of focused investment in process. The hickory adds a smoky-wood dimension you don’t often encounter alongside clean fruit; it’s the kind of thing you describe to someone else and realise sounds strange until they taste it.
Adolfo also maintains a small nursery of varietals gathered from producers around the world: a breeding programme for strains better suited to Brazil’s climate. The Fiat Uno, meanwhile, continues to serve.
In the Cup
Red apple skin and green grape up front — crisp, fresh, and gently tart. Hickory adds an unusual smoky-wood depth in the mid-palate. Brown sugar sweetness on the finish. Particularly interesting as it cools toward room temperature.
