Saddle up for a ride to Koke, Ethiopia with Ethiopia Koke Shalaye, also known as Giddyup! This single-origin coffee originates from the highlands of the Koke region in Gediyo, where farmers transport their freshly harvested cherries to the washing station, mostly by horse or donkey. After a careful 72-hour fermentation process under the watchful eye of Mr. Abreham Mengiste, the cherries are dried on raised beds for up to 25 days, resulting in a unique, flavour-rich coffee that reflects the passion and dedication of these smallholder farmers.
Drinking Notes
- Grape Calpis: A smooth and fruity start, offering the sweet, milky thickness of grape Calpis with a touch of gentle acidity.
- Kumquat: A burst of bright, tart citrus from kumquat cuts through the creaminess, providing a refreshing contrast that tingles on the palate.
- Rose: The finish blooms into a delicate floral flourish of rose, leaving a long-lasting and elegant aftertaste reminiscent of a twilight garden.
Why You'll Love It
- Anaerobic Natural Process: The cherries undergo a unique fermentation process in a sealed environment, which enhances the complexity of the flavours and adds depth to every cup.
- Transported by Horse & Donkey: The cherries are brought to the washing station by traditional means, adding a sense of heritage and authenticity to the process.
