After the drying stage at Fazenda Caxambu, the beans rest in a large room with enormous wooden vats for up to six days, to homogenise their moisture content. Our founder Michael noticed a record player tucked in the corner. He asked Carmem about it. “Caxambu means music box, right?” She shook her head. “No, I play music. Music for the beans — to make them happy.” Electronic music, she explained. Brazilian beat. All-nighter.

The Story
Carmem oversees every stage at Caxambu — fermentation, drying, milling, sorting — with the kind of attention to detail that produces a light-roasted Brazilian capable of trading the nuttiness most people associate with the origin for something quieter: floral, honeyed, and refined.
This handbrew lot expresses the farm’s best qualities. The manuka honey note comes from the bean, not the roast. The geranium adds an unexpected floral lift. It rewards a gentle approach — cooler water, longer steep — and gets more interesting as it cools. We offer it alongside our Caxambu espresso roast: entirely different expressions of the same farm, and the same music.
